When we think of the most elite meals, it's hard to overlook one that has claimed an entire day of the week. No one is saying things like Tuna Casserole Thursday or Sandwich Sunday. Yet when it's Tuesday, we automatically think: TACOS.
There is only one taco I crave when I'm in the mood for something fresh, and it's a shrimp taco. The naturally salty protein, the crisp flavors it wants next to it, and its versatility make it a go-to in our household. And the thing that pulls it all together is the sauce for shrimp tacos, which is where most people either nail it or fall flat.
Just like every road trip needs a great playlist, every burger needs fries, and every chip deserves a good dip, every taco needs its trusted companions. For shrimp tacos, those heroes are simple: perfectly cooked shrimp, plenty of fresh crunch, and a creamy sauce full of flavor to pull it all together.
With shrimp tacos, the protein is already chosen, so the real magic happens when you add the right toppings and sauce. Here's how to build a shrimp taco worthy of your dinner rotation.
This is more versatile than you might think. Shrimp is the perfect weeknight protein because seafood defrosts quickly, cooks in just a few minutes, and works with a lot of different taco flavor profiles.
Whether you want spicy blackened Cajun seasoning, smoky chipotle, or bright chili lime, shrimp is the perfect canvas. It doesn't need hours of marinating to take on the seasoning profile you're after.
It would be remiss of me not to point out that shrimp is one of the leanest, highest-protein options you can throw on a tortilla. Just 3 ounces provides about 20 grams of protein, and that same serving only clocks in around 80 to 100 calories depending on the variety. Shrimp also does heavy lifting in the vitamin and mineral department, delivering selenium, an antioxidant mineral critical for immune function, and iodine, a key nutrient for your thyroid.
You may have heard you shouldn't eat shrimp because it's high in cholesterol. Just like eggs spent a couple of decades in the doghouse, shrimp got a bad rap it didn't deserve. Yes, it has more cholesterol than some foods, but it's also very low in saturated fat, which is what research is far more concerned with when it comes to heart health. A serving of shrimp has less cholesterol than one egg, so don't let anyone talk you out of this delicious, genuinely healthy protein.
If shrimp is the star, fresh crunch is the supporting actor that props it up. Without a crunchy veggie, your taco ends up feeling one-note. Texture is just as important as flavor. We might disagree on it (crunchy chocolate chip cookie or soft-baked?), but we all agree texture matters.
There are shortcuts, like a bag of pre-shredded cabbage from the store, that add crispness without chopping a thing. If you have a few extra minutes, chop some cilantro and white onion for a street-taco effect, and quarter a lime for presentation and that final juicy spritz. Grab a whole head of cabbage and you can thinly slice a quarter of it for tacos and save the rest for a Bitchin'-inspired meal later in the week, like a deconstructed egg roll with ground beef and our Bombay Bitchin' dip.
Hate cabbage? Thinly slice some radishes for a peppery bite, or jicama for the juiciest fresh crunch. My other favorite is pickled jalapeño or pickled red onion. Mmmm. Are you getting hungry reading this? Because I'm getting hungry typing it.
Fresh toppings play multiple roles and feed more of our senses. All those colors are pleasing to the eye, and the vibrant pigments in produce and herbs each carry their own benefits for the body. Next comes the finishing touch, a creamy drizzle that ties everything together.
One small drizzle on your taco, one giant leap for Taco Tuesday. This is the creamy sauce that transforms a pile of good ingredients into a meal you'll crave again all week.
Who actually looks forward to Tuesday? It's the beige of the workweek, sandwiched between Monday and hump day. But give me a generous drizzle of Bitchin' Sauce on some bangin' shrimp tacos and suddenly Tuesday is enviable.
Shrimp brings a savory note, cabbage the crispness, lime a bright highlight, and depending on whether you want to lean into spice, you can choose a hotter Bitchin' Sauce or one lower on the Scoville scale that brings creamy umami instead.
Restaurants often serve a chipotle mayo, avocado crema, baja white sauce, or cilantro lime sauce on shrimp and fish tacos. They all add something delicious, but they mean pulling out the blender, chopping ingredients, washing dishes, and hoping you got the seasoning right. The alternative? Open a tub of Bitchin' Sauce.
Its already-creamy, almond-based texture gives you everything you want from a taco sauce without the dairy. No matter which flavor you grab, you'll open a portal to better shrimp tacos. I highly recommend Cilantro Chili, Hatch Chile, Chipotle, or Original. Each brings its own personality while doing the same job: pulling the taco together and elevating it.
Here's how a store-bought almond sauce compares to the usual homemade shrimp taco sauces:
| Sauce | Base | Contains dairy? | Effort |
|---|---|---|---|
| Cilantro lime crema | Sour cream or yogurt, mayo, lime, cilantro | Yes | Whisk or blend |
| Chipotle crema or mayo | Mayo, sour cream, chipotle | Yes | Whisk or blend |
| Avocado crema | Avocado, sour cream or yogurt, lime | Usually | Blend |
| Bitchin' Sauce (almond) | Blended almonds, garlic, lemon, spices | No | Open the tub |
Think of the sauce as the conductor of an orchestra. The shrimp, slaw, avocado, and tortillas are all phenomenal musicians, but without someone bringing them together, they're just instruments playing their own song. A generous drizzle of Bitchin' Sauce and suddenly everyone's performing in harmony.
Pro tip: I usually go one step past drizzling. I toss the cooked shrimp with a spoonful of Bitchin' Sauce just before serving, or use it as the base for my slaw. One container, endless possibilities.
When I'm trying to feed a crowd with multiple preferences, avoidances, and personalities, I almost always turn to a build-your-own taco bar. Instead of trying to make everyone happy, you give them the ingredients and let them be the chef for a moment.
It's interactive, customizable, and surprisingly low stress. Whether you're hosting game night, feeding a big family, hosting the next Bible study, or just trying to survive dinner with a few picky eaters, a shrimp taco bar checks all the boxes. Here's how to do it well:
The taco bar can be the whole meal, but if you want to go one step further, these time-tested sides are simple and reliable.
Watermelon just belongs next to shrimp. It's sweet, juicy, refreshing, easy for a crowd, and exactly what you want on a warm evening, a perfect complement to cool down against the spice of the tacos. It reminds me of the fresh watermelon aguas frescas at the taqueria I used to live down the street from. Put Tajín on the table so people can sprinkle it over their watermelon.
You have options here. Mimic the popular cilantro lime version, or add tomato paste and spices for a more Mexican style. Either way, it's a great, inexpensive way to add bulk to the meal.
I love a fresh batch of creamy black beans, and they're so easy in an Instant Pot. With the right amount of salt and cumin, all you need is black beans and water. Another great way to bulk up a meal with a high nutrition yield and a low ingredient cost.
Elote, aye aye yaye. If there were ever a side made for shrimp tacos, it's Mexican street corn salad: sweet corn, fresh cilantro, a little lime juice, chili powder, and the perfect canvas for a Chipotle Bitchin' Sauce drizzle. Best part? You don't have to eat it off the cob, so you can skip the immediate flossing.
You need to read this section, so no one ever tells you your shrimp reminded them of poorly cooked, rubbery scrambled eggs. Here's what to know: shrimp is one of the fastest proteins you'll ever cook. Read that again.
That's either its superpower or its biggest challenge. Walk away too long and your juicy shrimp turn into little rubber erasers off your second grader's school supply list. Yuck. Here's how to get it right:
Mission control, permission to drizzle? Granted.
We hope your next Taco Tuesday is the best yet, and that all your guests ask where they can get Bitchin' Sauce. Find the flavors and stores near you here, or if you're like me and would rather order online, shop the full lineup here.
Shrimp tacos love a creamy, tangy sauce that balances the salty shrimp and fresh toppings. The classics are cilantro lime crema, chipotle crema, and avocado crema. For an easy, dairy-free option that skips the blender, an almond-based sauce like Bitchin' Sauce delivers the same creamy finish straight from the tub.
Most homemade and restaurant shrimp taco sauces start with a dairy base, sour cream, mayonnaise, Mexican crema, or Greek yogurt, then add lime, garlic, and something for flavor like cilantro or chipotle. An almond-based sauce reaches the same creamy texture using blended almonds, garlic, lemon, and spices instead of dairy.
Yes. An almond-based dip like Bitchin' Sauce is naturally dairy free and gives you the rich, creamy drizzle shrimp tacos want without sour cream or mayo. It's a one-for-one swap for crema, and it works for lactose-intolerant and dairy-free eaters at the table.
Pat the shrimp dry, toss with a little oil and seasoning, and cook in a single layer over medium-high heat for about 2 to 3 minutes per side. They're done the moment they turn opaque pink and curl into a loose "C." If they tighten into an "O," they're overcooked, so pull them early and let them rest.
A simple cabbage slaw is the classic: thinly sliced green or red cabbage with a squeeze of lime and a pinch of salt. For a shortcut, toss shredded cabbage with a spoonful of Bitchin' Sauce and let it sit a few minutes. It doubles as the creamy dressing and the crunch, so your slaw and your sauce become one step.
Light, fresh sides pair best: watermelon with a little Tajín, cilantro lime or Mexican-style rice, creamy black beans, and Mexican street corn salad. A build-your-own taco bar with a few Bitchin' Sauce flavors also lets everyone customize their own plate.

When you see the word gut-friendly, what comes to mind? If your grandma's orange fiber powder triggered a nightmarish PTSD episode, you're not alone. Our understanding of gut health has come a long way in the last few decades, but most people still don't realize how easy it can be to support the gut's role in our health. It's simpler than you'd think, and it's more than taking some random probiotic you found at Whole Foods.
As a real-food dietitian, I want you to know that gut-friendly doesn't have to involve strange powders or forcing down fermented cabbage at 7 a.m. A lot of the time, the biggest impact comes from eating the widest variety of plants, prepared in different ways. Using a southwest bowl as our backdrop, I'm going to teach you a little gut health while we build dinner. Or skip to the bottom for the full southwest bowl recipe featuring Bitchin' Sauce.
If you read that heading without Meghan Trainor lyrics running through your head, I salute you. No treble. You need the right foundation for a bowl, and we're using rice, but in a different way than you might expect.
There's a common misconception that the best rice for your gut is whatever has the most fiber, so no white rice allowed, you have to hang out with brown rice or its eclectic older sibling wild rice. Plot twist: we're using white rice. Not every food choice needs the highest fiber value to be beneficial. The trick here isn't the ingredient, it's the preparation. A twist in how you prep the rice gives humble white rice a gut-friendly upgrade without turning it brown.
Allow me to introduce the idea of a resistant starch: cook, cool, reheat. A resistant starch doesn't get completely digested in the small intestine. It "resists digestion," so more of it reaches the colon, where microbes ferment it into a really important fuel called butyrate, which your colon cells use as an energy source. In other words, the starch becomes hard for our human cells to digest but turns into dinner for our microbes.
You make resistant starch by cooking the starch and then cooling it. Do it the day before or the same day. Cook your white rice according to package directions, then throw it in the fridge or freezer until it cools. This step feeds your microbes and also limits how quickly your blood sugar rises after eating. Want to upgrade the flavor? Squeeze lime juice over the top and mix in chopped cilantro. That's one bowl ingredient down and three plant foods checked off for the week. You could do this with brown, wild, or black rice too, but sometimes you just need permission to eat white rice, and a dietitian is giving it to you.
Any bean works, truly. When I think southwest, I think black bean or pinto. If you can find a fun mini bean, pinquito beans are like a cute younger sibling to the pinto. You can cook from scratch, but for an easy weeknight dinner, canned beans are perfectly acceptable, especially if you're leaning into plant-based proteins. Your beans do a lot of heavy lifting to keep your body happy and moving. Honestly, your microbiome doesn't care whether you soaked them overnight or popped a can. It's just happy you added beans.
Here we come, rainbow. This is where you plan ahead or use your veggie drawer as inspiration (or an excuse to clean house). A mix of fresh and cooked veggies gives your body a wide range of nutrients to pull from.
Start with a sheet pan. Toss on cubes of sweet potato, bell pepper, red onion, and frozen corn. Add avocado oil, salt, and pepper. You can also sprinkle on cumin, smoked paprika, and garlic powder. The key is roasting at a high enough temperature to get a nice browning.
Sometimes the difference between a homemade meal and a restaurant-quality one is enough textural contrast. Color and crunch bring more senses alive, so we don't want to roast the entire rainbow. Half the fun of a good bowl is in the contrasts:
The wellness world loves to fixate on "superfoods," but your gut isn't looking for one magical veggie. When we bring in different plants, we bring in different phytochemicals and different fibers. Variety is the useful goal for gut health. So far we're up to ten plant foods: rice, black beans, sweet potato, red pepper, red onion, corn, red cabbage, avocado, cilantro, and lime.
You can overachieve here. Zucchini that needs to go? Onto the sheet pan. Half a poblano? Add it. Cherry tomatoes getting wrinkly? Those are the best, they get delightfully sweet when roasted. Consider the recipe a starting lineup.
I'd lean into pepitas with a southwest bowl, though any nut or seed works. Toast them or use them raw, no need to complicate it. Nuts and seeds bring even more plant diversity, and just adding gut-supporting variety does a lot of work, which is the same idea behind our favorite high-fiber snacks.
If you're making a bowl, you need crunch. It isn't a garnish, it's a structural requirement. Salads have croutons, pad thai has peanuts, acai bowls have granola, cobb salads have bacon, even green bean casseroles have crispy onions. It's a thing, trust me. This southwest bowl has pepitas.
The bowl finally becomes a bowl now, because nothing up to this point matters if it's dry. Sauce does the heavy lifting of connecting all the ingredients. We go from a nutritionally impressive rainbow of food to something genuinely great the moment Bitchin' goes on.
When you add Bitchin', you're adding a handful more plant ingredients, but for easy counting we'll just use the almond base. With pepitas and almonds, we've reached a dozen different plants in one meal. Best part? You won't feel like you ate the garden, you'll just feel satisfied and full. The hardest part of the whole thing is choosing which Bitchin' flavor to use:
Drizzle from the squeeze bottle or add a few dollops from the tub. This is not the moment for timid amounts of sauce. You built an epic bowl. Sauce accordingly.
Serves: 4 | Prep: 15 minutes | Cook: 25 minutes | Total: 40 minutes
For the rice:
For the sheet-pan vegetables:
For the black beans:
Fresh toppings:
The most important part: 1/2 to 3/4 cup Bitchin' Sauce of choice
Each bowl packs around 13 grams of fiber (roughly half your daily needs) using at least 12 different plant foods, which makes it a seriously delicious way to support gut health. The resistant starch also keeps the carbohydrate count from spiking your blood sugar too quickly. Per serving:
Exact numbers vary with your Bitchin' flavor and how generously you drizzle. If you want more meals like this, our five high-fiber meals use the same approach. When you're ready to build your own, find Bitchin' Sauce at a store near you.
A southwest bowl usually starts with a grain base like rice or quinoa, plus beans, roasted vegetables (sweet potato, bell pepper, corn, onion), and fresh toppings like cabbage, avocado, cilantro, and lime. This gut-friendly version adds pepitas for crunch and finishes with an almond-based Bitchin' Sauce to tie it all together.
A creamy, southwest-leaning sauce works best. Chipotle brings smoky depth, Cilantro Chili plays off the beans and cabbage, and Creamy Jalapeño adds a kick. An almond-based sauce also keeps the bowl dairy free and plant-forward.
It can be very healthy. This one delivers about 13 grams of fiber and a dozen different plant foods per serving, supporting gut health through variety rather than a single "superfood." Cooking and cooling the rice creates resistant starch, which feeds beneficial gut microbes and softens the blood sugar response.
Yes, and it's ideal for it. Cook the rice and roast the vegetables ahead, store the components separately, and add the fresh toppings and sauce when you serve. Cooking the rice in advance is actually a plus here, since chilling it is what builds the resistant starch.

The same basic ingredients can yield completely different products. Nothing shows that more clearly than how different all my children are. But we aren't talking genetics here, we're talking culinary applications for one of the best peppers on the planet: the jalapeño.
Most people know this appetizer as jalapeño poppers, but you may call them jalapeño bites or stuffed jalapeños. Some say jalapeño boats or jalapeño bombs. Then there's the bacon-wrapped popper, the Texas torpedo, and the list goes on. The basic concept is to put cream cheese in a jalapeño and cook it somehow. Then, as we tend to do in America, we took it further by breading and frying them, wrapping them in bacon, throwing them on a grill, or into the newest kitchen must-have, the air fryer. Collectively we also decided those upgrades weren't enough, so we needed something to dip them in.
Jalapeño poppers don't take long to throw together, and in my opinion neither should the sauce you dip them in. The great news is there are a handful of well-matched flavors that go with your poppers straight off the grocery shelf, in the form of Bitchin' Sauce.
Jalapeño poppers are kind of perfect as-is. They already bring heat, fat and richness, some salt, and often a crunch. A good sauce can either contrast with those traits or double down on them, and Bitchin' can go either direction. And in case you're wondering, yes, they're spicy, but jalapeños are actually on the milder end, running roughly 2,500 to 8,000 Scoville Heat Units, so a creamy sauce takes the edge off nicely.
Whether you're eating poppers and looking for a sauce to cool things down, or you want to enhance the heat, we've got you.
This one is for the person who took one bite and realized the pepper took its assignment a little too seriously. Use Cilantro Chili straight from the tub, or add a splash of water and a tablespoon of extra lime juice to thin it out. It's great with extra-spicy poppers, breaded poppers, bacon-wrapped poppers, or little jalapeño boats topped with bacon or feta. It's a culinary fire extinguisher, but considerably more delicious.
Here we lean into the experience instead of fighting the pepper. I like two flavors here: Chipotle and Smokeshow, both of which bring a smoky undertone. Chipotle peppers are actually smoked, ripened jalapeños, so when you dip a jalapeño into a Chipotle-flavored sauce, you're literally dipping a jalapeño into its older, smokier sibling. Don't think about that too hard. It's a terrible visual.
If "bring the smoke" didn't already feel a little ridiculous, this one will. Try Creamy Jalapeño Bitchin' Sauce, either as the creamy center you stuff your jalapeño with or as what you dip it into. It may feel absurd, but I just tried it, and it's delicious.
There's a pleasant sweet tang in Buffalo Bitchin' that brings a fun twist to the popper dipping game. Enhance it further by stirring a tablespoon of maple syrup or agave into the sauce before serving. That takes some pressure off the spice and checks every box at once: sweet, salty, spicy, creamy.
If you don't want more heat or less heat, you just want more flavor, reach for Creamy Garlic Bitchin'. It's a fun option for cheese fillings beyond the traditional cream cheese. Got a cheddar-filled breaded popper? Match made in popper heaven.
Here's the quick cheat sheet:
| If you want... | Reach for |
|---|---|
| To cool the heat down | Cilantro Chili |
| Smoky depth | Chipotle or Smokeshow |
| Even more heat | Creamy Jalapeño |
| Sweet and spicy | Buffalo, plus a little maple |
| Pure flavor, no heat change | Creamy Garlic |
If you want the most epic Bitchin' Sauce stuffed jalapeño popper, the recipe is below.
Creamy, spicy, cheesy, and finished with plenty of Bitchin' Sauce to dip into. Easy enough for game night, but Bitchin' enough to disappear before halftime.
Servings: 4 to 6 | Yield: 12 poppers | Prep: 15 minutes | Cook: 18 to 22 minutes | Total: about 35 minutes
If the air fryer has taken over the heavy lifting in your kitchen (or it's still 90 degrees outside and Monday Night Football isn't a good enough reason to heat the house), here's the skinny. Preheat the air fryer to 375°F. Arrange the stuffed jalapeños in a single layer, working in batches as needed. Turn to baking mode and bake 5 minutes. Once the breadcrumbs have melted into the filling, switch to the air fry function. If you start with air frying, you'll probably have breadcrumbs everywhere except on top of your poppers.
Serving size: 2 poppers
Sodium will vary depending on the cheddar, cream cheese, panko, and exact Bitchin' flavor used, but it'll likely land in the 250 to 300 mg range.
I love bringing something like this to a party as my contribution, because it checks all the boxes: a veggie, a protein, and tons of flavor. They're also not something others typically think to bring. For your next backyard barbecue, pool party, or potluck, think of poppers as a fun addition to everything that usually shows up: veggie plates, chips, guac, salsa, grilled meats. If you want another crowd-pleaser in the same lane, our jalapeño artichoke dip is a great pairing.
Honestly, appetizers become dinner pretty quickly if you pile enough on a plate. You could really wow everyone by showing up with a trio of Bitchin' flavors next to your poppers. That smoky Chipotle flavor is an easy crowd favorite. My only advice: make triple what you think you need, because these practically jump off the plate. When you're ready to grab a few flavors, find Bitchin' Sauce at a store near you.
A creamy sauce is the classic move, either to cool the heat or to lean into it. Cilantro Chili cools things down, Chipotle and Smokeshow add smoke, Creamy Jalapeño turns up the heat, Buffalo (with a little maple) brings sweet-and-spicy, and Creamy Garlic adds flavor without changing the spice level. An almond-based sauce keeps them dairy free on the dip side.
Beyond ranch, poppers love a creamy almond-based sauce, a cilantro-lime dip, chipotle or smoky sauces, or a sweet-and-spicy buffalo dip. You can use the same flavor as both the filling and the dip for a doubled-up effect, like stuffing and dipping with Creamy Jalapeño.
They have a mild-to-medium kick. Jalapeños run about 2,500 to 8,000 Scoville Heat Units, and the cream cheese filling mellows a lot of that heat. Removing the seeds and membranes tames them further, and a creamy dipping sauce cools things down even more.
Yes. Preheat to 375°F, arrange the stuffed poppers in a single layer, and start in baking mode for about 5 minutes so the breadcrumbs set into the filling before switching to the air fry function. That order keeps the breadcrumbs on top of the poppers instead of scattered around the basket.
