Bitchin’ Moroccan Chicken Bowl

This Moroccan Chicken bowl is a flavor bomb straight from Starr’s personal chef days—succulent Tajin-spiced chicken, cozy couscous, and punchy spiced chickpeas all hugged by a creamy, zesty layer of Original Bitchin’ Sauce. It’s a warm, aromatic bowl that feels fancy yet easy.

Ingredients
For the Bowl -
1 cup Couscous
1/2 cup Spiced Chickpeas
1 Tajin Chicken Thigh with Gravy
1 tbsp Fresh Parsley Leaves
1/4 cup Original Bitchin' Sauce
Spiced Chickpeas -
1 can Garbanzo Beans, drained
3 tbsp Tomato Juice
1 tsp Harissa Seasoning
1/2 tsp Turmeric
1/2 tsp Flaky Salt
to taste Cracked Black Pepper
Tajin Chicken -
7 Bone-In, Skin-On Chicken Thighs
to taste Sea Salt
to taste Black Pepper
5 cloves Garlic, minced
1 large Lemon, cut into wheels
1 large White Onion, chopped
2 Red Bell Peppers, cut into strips
zest of 1 Lemon
1 tbsp Paprika
1 tsp Ground Ginger
1 tbsp Cumin
1 tsp Coriander
1 tsp Cinnamon
2 tbsp Honey
1 cup Olives - Kalamata, Castelvetrano (or both!)
Method

For the Chickpeas:

Combine all ingredients in a bowl and fold gently to coat.


For the Tajin Chicken:

  1. Pat chicken dry. Season both sides with salt and pepper.
  2. Sear in a hot skillet with a bit of oil, skin-side down first, for 4 minutes each side. Remove and set aside.
  3. To the same skillet, add lemon wheels and cook until softened; place on top of the seared chicken thighs.
  4. Add a splash more oil if needed. Sauté onions until translucent, then add garlic and lemon zest. Stir in spices and honey. Add red peppers and olives.
  5. Return chicken to the skillet. Bake at 350°F for 20 minutes, until juicy and cooked through.

For the Bowl:

1. Make the couscous:
Prepare according to package directions—sub broth for water for extra flavor!

2. Make the chickpeas:

3. Cook the Tajin Chicken:
See Tajin Chicken recipe below—juicy, lemony, spiced perfection.

4. Assemble your Bitchin’ bowl:
Scoop couscous into the bottom of your bowl. Arrange spiced chickpeas around the edges in little bundles or a rim—artist’s choice! Dollop Original Bitchin’ Sauce right in the center. Nestle your warm Tajin Chicken thigh on top, then spoon the savory veggies and gravy from the skillet all around. Finish with fresh parsley leaves scattered on top.

5. Extra Bitchin’ tip:
Sprinkle a handful of chopped dried apricots or raisins for a hint of sweetness—or swap fresh lemon with preserved lemon for an authentic twist.
