Bitchin' Shrimp Mojo Bowl

A Bitchin’ Caribbean party in a bowl! Citrusy shrimp, sweet crispy maduros, savory Congri rice, and a hit of Heat Bitchin’ Sauce to keep things spicy. Warm, vibrant, and guaranteed to get you groovin’ in the kitchen.

Ingredients
For the Bowl: -
6 Grilled Shrimp Mojo
1 cup Congri
1/2 cup Maduros (fried sweet plantains)
1 Radish, sliced into wheels
1 tbsp Fresh Cilantro Leaves
1 wedge Lime
1/4 cup Heat Bitchin' Sauce (swap with Chipotle or Smokeshow Bitchin' Sauce for a milder twist)
For the Shrimp Mojo: -
1 lb Gulf Shrimp, peeled with tail on
6 cloves Garlic, minced
Juice of 1 Lemon
Juice of 2 Limes
Juice of 1/2 Orange
1 tsp Oregano
1 tsp Cumin
1tsp Cracked Black Pepper
2 tbsp Flaky Salt
4 tbsp Extra Virgin Olive Oil
zest of 1 Lime
For the Congri -
2 cloves Garlic, minced
1 White Onion, chopped
1 Green Bell Pepper, chopped
1 tbsp Oregano
1 tbsp Cumin
2 tbsp Salt
1 Bay Leaf
1 can Black Beans, drained but not rinsed
1 cup Cooked White Rice
Method

For the Shrimp:

Rinse and pat shrimp dry. Add shrimp and all other ingredients to a gallon-size zip bag and marinate for 10–15 minutes. Grill or sauté over medium-high heat for about 3 minutes per side until bright pink with a little char. Remove tails before serving.

For the Congri:

Heat a swirl of olive oil in a pan. Sauté onion, pepper, and garlic until translucent. Add beans, spices, and bay leaf; simmer for about 5 minutes. Remove from heat and fold the beans into the rice. 

For the Maduros:

Peel plantains and slice on a bias, about ½ inch thick. Heat about ¼ to ½ inch of fry oil in a skillet until a drop of water sizzles. Fry the plantains in a single layer for about 2 minutes per side, until golden and tender. Remove to a paper towel and sprinkle with salt.

Assemble the Bowl:

1. Add Congri to your bowl and spoon Heat Bitchin’ Sauce right on top. Nestle in the maduros on one side, radish wheels around the edge, and pile the shrimp on top.

2. Finish with fresh cilantro and a lime wedge for squeezing.Bonus: Add avocado cubes or cherry tomatoes if you’re feeling fancy.
