A Bitchin’ Favorite: How We Created Our Chipotle Sauce

Every superhero has an origin story and our chipotle sauce is no exception. In the saucy beginnings we had a few core flavors: original, cilantro chili, and chipotle.
The latter with its natural smoky notes made it an addicting part of our lineup. In most hero stories the powers are drawn from elements in nature like earth, water, wind, and fire.
In the sauce universe, chipotle combines the powers of smoke and earth, delivering a depth of flavor, balance, and a kind of strength we are naturally drawn to. How did we make this so craveable?
What ingredients guided its formulation? How can you use chipotle sauce in your everyday kitchen?
What makes this one different? Does it have a hidden power?
Not all heroes can fly, use spidey senses, or rely on high-tech gadgets(I’m looking at you Iron Man) - some win by grounding the world around them, and Bitchin’s chipotle sauce is just that kind of hero. It’s endless versatility makes it the perfect anchor in snacks and meals alike.
What is a Chipotle Pepper?
Most people didn’t know what a ‘chipotle pepper’ was before the early 1990s. It became trendy in the food scene around the same time a restaurant bearing the same name became popularized.
A “chipotle pepper” isn’t a specific type of pepper - it’s actually a fully ripened jalapeño pepper that has been smoked and dried. This preserved pepper has a spicy history, helping it become a make sense flavor for our Bitchin’ brand.
It originates in Mexico, with roots in Aztec food preservation(1). This process added a deep-smoky flavor, but it was actually a way of removing moisture from the jalapeno and preventing spoilage in periods of surplus jalapeños - important for thousands of years before refrigeration was a thing.
The chipotle peppers used in our chipotle sauce are made from fully ripened red jalapeños. This gives it a slightly sweeter end product than if you created it with chipotle peppers from a green jalapeño.
This choice balances the heat and warmth from the capsaicin(spicy parts) in the pepper. When our co–founder Starr went Vegan in 2004, she started tinkering with the recipe, chipotle peppers were just coming into their “hey-day”.
By 2010 when the sauce hit farmer’s markets, our customers confirmed what we had experienced in our kitchen, the smoky and spicy balance chipotle peppers add is just as addicting to others as it was to us.
How Do You Say Chipotle?
Before we move on, it’s confession time: how have you been reading the word chipotle? We have heard it all- and honestly, as long as it makes its way onto your chip, who cares?
Let the flavor speak for itself, we say. Still, if we are going to talk about the history of the pepper and how it became a true superhero flavor, this part of the lesson deserves a moment.
The word comes from Spanish, where its most authentic pronunciation is chee-POHT-lay. In America we tend to take things and run with them, so you’ll often hear chee-POHT-lee.
That isn’t too far off. While our opinion is that you can say it however you want, there is a category of please don’t.
In this category you’ll find chee-POHT-uhl and my mother’s pronunciation - chee-poLLLLT-ee. That’s the worst one.
And on that embarrassing note, let’s move on. Potato, Potahto…
Why Chipotle Sauce Became a Bitchin’ Staple
If you are just getting familiar with our Bitchin’ brand, here are a few things that are important to us - from our company values all the way to the shelves where you grab our products: real, simple ingredients, bold flavors, no preservatives, having a Bitchin' time, and a commitment to do good be good.
Choosing ingredients that align with that vision isn’t an afterthought, it’s the foundation of everything we make.
Yet it’s not all about brand alignment, as you know, sometimes things are a combination of being in the right place at the right time. We had our beginnings in San Diego, a stone’s throw from the Mexican border.
Where street tacos, a beach lifestyle and access to amazing fresh ingredients build a melting pot for flavor development. I mean, what’s better than eating chips and dip while chilling on a towel at the beach?
Cal-Mex cuisine was starting to move from its awkward teen years into its more sophisticated adulthood growing more nuanced and developed flavors, and with that - our palettes matured as well. But, the market craved something to fill a gap.
And to explain that gap, imagine sitting in a live theater and turning your attention to stage left where a man dressed as a huge chipotle pepper is seen dancing towards a grown woman dressed in an almond costume, they collide and do some ballet (or break-dancing) and in the midst of some Bitchin' moves, you see a tub of sweet saucy goodness rise from below stage, like a Taylor Swift costume change on the Eras Tour.
The trendy California food scene was just begging for a sauce that was creamy but not based in dairy, flavorful but not salsa, more nutrient dense than a hummus, but that could transcend categories like dip, sauce, and kitchen staples.
Flavor Profile — What Makes Our Chipotle Sauce Different
Smoky Heat (Not Overpowering)
The cheerleaders telling us to “be aggressive, be, be aggressive” were talking to serrano, habanero’s, and ghost peppers. By comparison, the mild Jalapeño peppers hang out much lower on the Scoville Heat Unit scale.
Wilbur Scoville, a pharmacologist, invented the Scoville scale in 1912 to measure the pungency of peppers and chillies, generally related to their capsaicin content(2). Jalapeno peppers, the chipotle peppers pre-make over, are much lower on the scale than those other peppers listed above.
Then we put the pepper through an intense make-over. Smoking rounds out the sharp heat of the jalapeño pepper and emphasizes its savory, earthy notes.
As a dietitian, I remember learning in my food science classes that smoke triggers the umami and savory associations, which psychologically soften our perception of spice. This makes chipotle an approachable “spicy” flavor.
Bold, but “middle heat” and a good fit for someone that I would call spice-curious versus an outright spice-avoider. We are used to heat in different contexts like hot salsa.
Most salsas use raw chili peppers which provide an intense sharpness, and since we are using a smoked pepper you feel a warmth with a more subtle smoothness than in hot salsas. The smoky depth keeps you coming back for more—without burning out your palate after the first few bites.
You may also be familiar with heat in other settings like spicy barbecue sauces, but these vinegar-forward peers provide an acid enhancement to the burn that makes it read more spicy versus the smoky warmth our Bitchin’ Chipotle Sauce provides, offering the spice but without overpowering you. We’ve all met the overly aggressive admirer.

Creamy Texture Without Compromise
The experience isn’t all about the flavor, texture is just as important. We call that ‘mouth feel’ in the food product world.
Having a vegan sauce with a creamy texture that isn’t grainy, oily, or heavy is like finding a mythical creature in the grocery aisle. Unicorns, where are you?
Oh, hanging out with chipotle sauce in the refrigerator section. Texture is everything.
It even has a direct impact on flavor and taste. How you read heat in a sauce is strongly influenced by the creamy texture.
A slightly thicker sauce delivers the heat more gradually - this supports the smoky warmth, without overpowering heat. You can’t eat the sauce without thinking it’s rich, satisfying, and an experience versus a “snack”.
