Bitchin’ Nicoise Bowl

Treat yourself to a refreshing, feel-good meal that tastes like a seaside getaway in every bite. Tender seared tuna (or your go-to canned!), creamy potatoes, crisp green beans, jammy eggs, briny olives, and marinated veggies, all tossed on fresh butter lettuce and drizzled with a bright, herby Green Onion Bitchin’ dressing. Ingredients
For the Bowl -
1 cup Gem or Butter Lettuce Leaves
1/4 lb Seared Tuna (Albacore, Ahi, or Canned)
3-5 small potatoes, boiled and halved
1/4 cup Green Beans, blanched
2 Eggs, hard-boiled and halved
1/4 cup Cherry tomatoes, halved
6 Kalamata Olives
1/4 cup Marinated Artichokes
1/4 cup Marinated White Beans*
to taste Chives and Parsley, chopped
1/4 cup Green Onion Bitchin' Sauce
1 tbsp White Wine Vinegar
1 tbsp Dijon Mustard
Marinated White Beans -
1/2 can White Beans, drained and rinsed
1 tbsp Olive Oil
1 tsp Red Wine Vinegar
1 Garlic clove, minced
to taste Salt and Pepper
Method

Marinated White Beans:
Combine white beans, olive oil, red wine vinegar, minced garlic, and salt and pepper in a small bowl. Let it marinate while you prep the rest of the bowl.

For the Bowl:
1. Make the dressing:
In a small bowl, mix Green Onion Bitchin’ Sauce, vinegar, and Dijon. Stir and set aside.

2. Cook the tuna:
If using fresh tuna, whisk 1 egg white with 1 tsp Dijon mustard until frothy. Brush over the tuna and coat with coarse black and white pepper and a generous pinch of flaky salt. Heat grapeseed oil in a skillet over medium-high heat and sear the tuna for 1-2 min per side until the edges are golden but the center stays rare. Remove and let rest.

3. Boil and blanch:
Bring a large pot of water to a boil. Add potatoes first anc cook until fork-piercable, then add the eggs. After 4 minutes, toss in the green beans and blanch for 2 minutes. Transfer everything to an ice bath for 4–5 minutes to cool.

4. Prep:
Peel and halve the eggs. Cut potatoes in half if needed. Leave green beans whole. Slice the tuna into ½-inch thick slices.

5. Build your bowl:
Place the lettuce in the base of your bowl. Neatly arrange potatoes, green beans, eggs, cherry tomatoes, olives, artichokes, marinated white beans, and tuna in sections. Sprinkle with chopped chives and parsley.

6. Dress it up:
Drizzle your Green Onion Bitchin’ dressing generously over the top. Relax and dig in—spa vibes activated!
