Meatball Bitchin’ Bowl

This bowl is what happens when your favorite Italian appetizers have a party in the same dish. Juicy homemade meatballs, buttery polenta, melty mozzarella, and fresh bruschetta—all tied together with a saucy swirl of Pesto Bitchin’ Sauce. It’s indulgent, comforting, and absolutely not for sharing.

Ingredients
For the Bowl: -
1/2 cup Polenta
4 Meatballs
1/2 cup Bruschetta
1/2 ball Buffalo Mozzarella or Burrata
1/4 cup Pesto Bitchin' Sauce
Meatballs -
1/2 large Onion, diced
2 cloves Garlic, minced
1/2 cup Parsley, chopped
1 lb Ground Beef
1 lb Ground Pork
3/4 cup Parmesan Cheese, grated
1/2 cup Panko Bread Crumbs
2 Eggs
1 tbsp Flaky Salt
1/4 cup Stock or Broth
Polenta -
3 cups Chicken Broth
1 cup Dry Polenta
1 cup Parmesan, grated
2 tbsp Butter
Bruschetta -
1 cup Diced Tomatoes
1 tbsp Minced Garlic
1/4 cup Basil, chiffonade
Drizzle of Olive Oil
1 tsp Flaky Salt
1/2 tsp Cracked Black Pepper
Method

1. Cook your components:
Get those meatballs in the oven and simmer that polenta while you whip up the bruschetta. Multi-task like the Bitchin’ boss you are.

2. Bowl it up:
Scoop a bed of polenta into your bowl. Swirl in a big ol’ spoonful of Pesto Bitchin’ Sauce right over the top. Add meatballs on one side and your mozzarella or burrata on the other.

3. Brighten the vibe:
Add a scoop of Pesto Bitchin’ Sauce onto the cheese, then top it all off with a generous spoonful of bruschetta. Feeling fancy? Add extra basil on top.

4. Eat it before someone else does.

Meatballs - Make it Meaty!

Sauté onion and garlic in olive oil until translucent and move to a large mixing bowl. In that same bowl, mix all remaining ingredients. Add broth to help it get nice and sticky. Roll into 1½–2 inch balls and place on a parchment-lined, rimmed baking sheet. Bake at 375°F for 20 minutes, or until golden and cooked through.

Polenta - Get it Creamy!

Bring broth and butter to a boil. Slowly whisk in polenta—watch for splash attacks! Stir regularly until thickened. Remove from heat and stir in cheese.
